📝 Ingredients


🍪 For the Crust



  • 200 g (2 cups) almond flour
  • 30 g (¼ cup) shredded unsweetened coconut
  • 50 g (¼ cup) coconut sugar (or brown sugar)
  • 60 g (¼ cup) melted coconut oil
  • 1 tbsp maple syrup
  • Pinch of sea salt


🍯 For the Dairy-Free Salted Caramel


  • 200 g (1 cup) granulated sugar
  • 60 ml (¼ cup) water
  • 120 ml (½ cup) full-fat coconut milk
  • 60 g (¼ cup) coconut cream
  • 1 tsp pure vanilla extract
  • 1 tsp sea salt (or to taste)


🥥 For the Coconut Cream Layer


  • 400 ml (1 can) full-fat coconut milk, chilled overnight
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract

  • Shredded coconut, lightly toasted
  • Flaky sea salt
  • Dark chocolate shavings


👩‍🍳 Method


Step 1: Make the Crust


  1. Preheat oven to 175°C (350°F).
  2. Mix almond flour, shredded coconut, coconut sugar, melted coconut oil, maple syrup, and a pinch of salt.
  3. Press firmly into a 23 cm / 9-inch tart pan.
  4. Bake for 12–15 minutes until golden brown. Let cool completely.




Step 2: Prepare the Salted Caramel


  1. Heat sugar and water in a saucepan over medium heat until amber in color (do not stir while it caramelizes).
  2. Slowly whisk in coconut milk and coconut cream (it will bubble vigorously).
  3. Stir in vanilla extract and sea salt.
  4. Cool slightly, then pour over the crust. Chill for 30 minutes to set.


Step 3: Whip the Coconut Cream


  1. Scoop thick cream from the top of the chilled can of coconut milk.
  2. Whip with maple syrup and vanilla until fluffy.
  3. Spread evenly over the set caramel layer.


Step 4: Garnish & Serve


  1. Sprinkle with toasted coconut, dark chocolate shavings, or flaky sea salt.
  2. Chill for 1–2 hours before slicing.
  3. Serve cold for best texture.
